In the past salads have been something that I ate but was never excited about eating. But when I started checking out new recipes and then creating my own avocado spinach salad mixes I’ve come to love salads. The more I learned about how healthy avocado and spinach are I fell in love with these recipes. Knowing that I can live a healthier life based on what I eat, has changed my whole perspective on cooking and meal planning.
Being a busy mom like many of us are preparing healthier meals can definitely be a challenge. So creating yummy salads as either a side dish or the main dish makes meal planning so much easier. Salads can easily be modified to fit the taste of everyone in your family. You can literally add almost anything to a salad. The more delicious ingredients you had the healthier the salad and the taste is amazing! So I’ve been on an Avocado and spinach the last couple of weeks and decided to create a salad with those two main ingredients, of course, I’ve added some other tasty yummy ingredients to beef it up.
Avocado Spinach and Zucchini Salad- This salad is packed with delicious flavor and energy. A vegetable salad is easy to make and benefits the whole body. Everything from your hair to your brain is enhanced with these super vegetables. Create as a side salad or a meal. Add grilled steak or chicken for great taste and protein. To make it look extra attractive put your yummy creation in a beautiful bowl as a centerpiece to your table setting.
Fresh green salad with exploding flavor and crunch!
Makes 4-6 servings
1 fresh avocado diced
4 zucchini tailed, topped and grated
2 cups of fresh baby spinach,
3/4 cup of finely chopped sun-dried tomatoes
6 red onions, cut fine (these are similar to spring onions)
2 tbsp fresh shredded coriander (optional)
40g pine kernels
INSTRUCTIONS
Mix all ingredients together in a medium to large mixing bowl. It’s that easy!
Create a Delicious Dressing!
1 tsp Organic honey
1 tsp Dijon mustard
40 ml Extra virgin olive oil
30 ml White wine vinegar
10 ml Sesame oil
Salt and Pepper to taste!
INSTRUCTIONS
Mix all ingredients together in small to medium mixing bowl. Combine with salad ingredients and mix.
Your done, let’s eat!!
