Makes 4-6 servings
1 fresh avocado diced
4 zucchini tailed, topped and grated
2 cups of fresh baby spinach,
3/4 cup of finely chopped sun-dried tomatoes
6 red onions, cut fine (these are similar to spring onions)
2 tbsp fresh shredded coriander (optional)
40g pine kernels
INSTRUCTIONS
Mix all ingredients together in a medium to large mixing bowl. It’s that easy!
Create a Delicious Dressing!
1 tsp Organic honey
1 tsp Dijon mustard
40 ml Extra virgin olive oil
30 ml White wine vinegar
10 ml Sesame oil
Salt and Pepper to taste!
INSTRUCTIONS
Mix all ingredients together in small to medium mixing bowl. Combine with salad ingredients and mix.
