Hello Friends! I hope everyone is doing well. As the cook of the family I’m always searching for delicious dinner recipes. I focus on dinner recipes that my entire family will eat and love. Sometime that can be challenging for a family of six. My key factors for weekday dinner recipes are of course they have to be delicious, under an hour to make, healthy, and budget friendly. Also I try to find meal recipes that my girls can create as well.
My first recipe is one of my favorites. I love seafood and my family loves pasta so it’s a win, win. Delicious “Garlic Butter Shrimp Pasta” paired with a healthy spinach salad.
Garlic Butter Shrimp Pasta
We have a delicious combination of buttery shrimp and must have garlic tossed in angel hair and a yummy Parmesan white wine sauce. This all comes together in just under 30 minutes. It’s a meal that will feel you up but not slow you down. This is a great recipe to modify as well. Adding other seafood such a crab or even lobster is simply delicious.

Ingredients
4 tbsp. cut butter
Kosher salt
4 clover garlic, minced
1 tbsp. extra-virgin olive oil
Lemon juice – 1/2 of lemon
freshly ground black pepper
3/4 cut dry white wine
12 oz. cooked angel hair
1 tbsp. freshly chopped parsley
Pinch of crushed red pepper flakes
3/4 cup freshly grated parmesan add more for garnish

Beef Taco Salad

Who wants “Beef Taco Salad”….MEEEEE! OK, personally I’ve never met anyone that doesn’t enjoy a good taco salad. Whether your using beef, chicken or veggie most people love taco salad recipes. Taco salads check all the boxes and more. Its a super healthy meal and you can make it has healthy as your family can tolerate plus it takes no time. You can literally make it a million ways and if your not great around the kitchen you will fall in love with how easy it is.
Ingredients
1/4 freshly chopped cilantro
kosher salt
Sour cream
1 lb. ground beef
Vegetable oil
1 c. Pico de Gallo
1 c. shredded cheddar
Freshly ground black pepper
2 heads romaine lettuce, chopped
1 pt. cherry tomatoes, halved
2 tbsp. tomato paste
2 tbsp. taco seasoning
2 corn tortillas, cut into 1/4″ strips
1 (15-oz.) can black beans, drained and rinsed

Garlic Chicken Fried Brown Rice
This is such a great meal for the entire family. My kids love this dish! It’s quick easy and great for left overs. The brown rice makes it even better and healthier as well. Of course if your not a fan of brown rice you can definitely use white rice. This is a great recipe to modify as well. You can add your favorite veggies and I love to add crab meat and sometimes lobster. Don’t forget make enough for leftovers! I love to pair this with meal with cornbread or egg rolls.
Ingredients
2 tablespoons vegetable oil, divided
8 ounces skinless, boneless chicken breast, cut into strips
½ red bell pepper, chopped
½ cup green onion, chopped
4 cloves garlic, minced
3 cups cooked brown rice
2 tablespoons light soy sauce
1 tablespoon rice vinegar
1 cup frozen peas, thawed ingredients
