Crockpot recipes are my favorite way to create a delicious dinner fast. I’m literally able to do two task at once without going crazy. A healthy dinner doesn’t have to be super expensive or time consuming. I love when my home is filled with the smell of delicious hearty comfort foods. My sister gave me a new crockpot for Christmas and it’s amazing. The size is perfect for a large family like mine, which does double duty when I’m entertaining. I have collected some simple healthy crockpot recipes that will work for weekdays and weekend meals.
Crock Pot Low-Fat Beef Stew
This stew is hearty and healthy at the same time. Your kitchen will be filled with a warm and delicious aroma of all your favorite vegetables. Combine this yummy soup with everyone’s favorite grill cheese sandwiches and you have an amazing meal.
Ingredients
- 1 pound lean beef stew meat, cubed in about 1-inch pieces
- 2 tablespoons flour for coating the beef
- 1 cup red wine, (optional non-alcoholic wine or vegetable broth)
- 1 teaspoon salt, divided
- 1/2 teaspoon black pepper, divided
- 2 tablespoons extra-virgin olive oil
- 1 medium onion, coarsely chopped
- 1 clove garlic, minced
- 2 medium potatoes, peeled and cubed
- 2 medium carrots, peeled and sliced
- 2 celery stalks, coarsely chopped
- 1/2 cup diced red peppers
- 2 bay leaves
- 6 sprigs of thyme, remove leaves from 4 sprigs
- 2 cups beef broth, fat-free and low-sodium
- 1 (14-ounce) can fire-roasted diced tomatoes

CROCKPOT CHICKEN WILD RICE SOUP

Anytime is the perfect time for a flavorful delicious soup. Packed with hearty herds, veggies and lean protein, you will be full and your body will love you for it. Slow Cooker Cabbage Roll Soup

This is a great way to introduce cabbage to your kids or yourself. Cabbage fills you up with less calories and is high in fiber while also being packed with nutrients. I love cabbage and I was excited to try it in a soup mixed with ground beef. The taste and flavors are just exploding in you mouth. - 1 lb ground beef
