Hello friends, hope everyone is doing well and having a great week! I have some quick healthy budget-friendly recipes that your family will love. Like most of us, my weekdays are pretty busy but I still want to feed my family healthy meals. With a family of 6 finding quick budget-friendly healthy recipes are a must. And remember cooking healthy recipes doesn’t have to be super time consuming and break the budget.
So it’s the beginning of the week and my number one frustration is what to cook for dinner. My normal routine is to ask myself, why do you wait until the day of to figure out what’s for dinner.???, it’s Monday why didn’t you plan your meals for the week on Saturday. I’m telling you this is what I do almost every Monday or Tuesday. It’s like self-torture.

We’ll this week I’m making a change!! It’s a couple of days late since I’m already into the week but it’s still a benefit for the rest of the week. Plus the hardest challenge in changing your routine is actually getting started and that’s what I’m doing.
So I took a look at one of my favorite food blogs which is Pinch of yummy and of course they have some tasty recipes for meal planning for the week. What I will start doing is meal planning for the week which is not anything new I know…but for me it huge.LOL! Once my meals were planned, I checked them out with the family and then to the grocery store for shopping I went. For me checking with the family is crucial.
I have a family of six so making a whole bunch of food that only one or two people want to eat is never an option. When choosing my meals I tried to stay within a 30-minute time span and recipes I could modify if necessary.
Below are some great recipes that my family and hopefully yours will love for years to come. These are all recipes that can be modified and changed to better suit your family if necessary. Try them and let me know what you think. Enjoy!
Sunday dinners in my family are simply amazing! I’m so blessed that a good number of my family members live within 10-15 minutes of each other. Sunday’s we all get together for dinner. There’s always a large variety of foods to choose from and everything is always delicious. With all of the great food on Sunday’s, I prefer to eat light and healthy on Monday’s.
AMAZING RECIPES
So we are starting the week off with Barbecue Salmon Bowls with mango avocado salsa.
BARBECUE SALMON BOWLS
This exotic dish is full of great flavor and taste. Packed with nutrients and a bit of excitement, not your ordinary salmon. You don’t often hear barbecue rub combined with salmon but this combination is absolutely delicious.

Salmon:
- 1–2 lbs. fresh salmon
- 2 tablespoons brown sugar
- 2 teaspoons smoked paprika
- 2 teaspoons onion powder
- 1 teaspoon garlic powder
- 1/2 teaspoon chili powder
- 1/2 teaspoon kosher salt
- 2 tablespoons olive oil
Mango Avocado Salsa:
- 2 mangoes, diced
- 1 avocado, diced
- 1/4 cup minced cilantro
- 1/4 cup minced red onion
- minced jalapeño (optional, to taste)
- a drizzle of honey
- a squeeze of lime juice + a little lime zest
- salt to taste

MEXICAN LASAGNA
Next, I have a great recipe for Mexican lasagna with a little twist using tortillas. One of the great things about this recipe is that it is gluten-free. They’re so many people now that have to be on a gluten-free diet it’s good to have recipes that work for everyone in the family. One of my girls is on a gluten-free diet. We try to stick to it as much as possible. So this Mexican lasagna with tortillas definitely checks all the boxes.
Lasagna is a great choice for family-friendly dinner ideas on a budget. Even your pickiest eater loves tasty corn tortillas. And once again this is a delicious meal that is gluten-free!!! Another plus is that this is a perfect dish for letting the kids share in the joy of cooking.
This recipe is super easy, and unlike traditional lasagna, there is little to no prep work. Using corn tortillas makes the layering process the best part, and the kids can join in for the fun.
Taco lasagna is one of my families favorite dinner meals! As a mom and the primary chef of the house, it’s a dish I enjoy making. To complete the meal I add a tasty salad and I’m done! With a family of six, I have to be budget conscience and this meal checks all the boxes.

- 2 lbs. ground chuck, cooked and drained; we highly recommend
- 1.25 oz. taco seasoning packet
- 3/4 cup water
- 1 cup green onions chopped
- 1 cup corn kernels thawed
- 16 oz. salsa, your favorite brand
- 12 corn tortillas 6-inch size
- 20 oz. hatch chiles (five 4-ounce cans), mild and diced
- 1 lb. Mexican Blend cheese, grated
- 10 oz. mild enchilada sauce

CHILI
The next recipe is one of my favorites. I love meals that can spread across 2-3 days. Yes, I did say three days…LOL! Chili is hearty, healthy and delicious plus it’s perfect for the budget. When I make chili the first day we have chili over rice with a salad, the second day we have baked potatoes topped with chili and chicken wings, and the third day we create taco salads. Every day the chili is even more delicious.
Chili is a meal that just gets better and better every time you eat it. When I’m using this recipe I opt out of adding the beer, the taste is still amazing you don’t miss it at all. My daughters love it when I make cornbread to go with the chili. They put a slice of cornbread in a bowl and cover it with chili, this is something you have to try. The combination will keep you at the table all-day.

- Bacon
- Ground beef
- Onion

- Beer – can replace with more broth instead

TUNA NOODLE
I believe a well-stocked pantry should always have basic staple ingredients including pasta and tuna. Tuna Noodle Casserole is a classic dish perfect for weekday dinners. Its budget-friendly and you can modify the ingredients to fits your taste. This casserole is made with simple ingredients that are good for you and usually made with ingredients found in most pantry’s. I love making casseroles and this one is one of my favorites.
Your family will love the creamy texture and warm taste in this nutritious meal. I serve it with Hawaiian bread and a spinach salad.

Ingredients
- 1 can (10-3/4 ounces) reduced-fat reduced-sodium condensed cream of celery soup, undiluted
- 1/2 cup fat-free milk
- 2 cups cooked yolk-free wide noodles
- 1 cup frozen peas, thawed
- 1 can (6 ounces) light water-packed tuna, drained and flaked
- 1 jar (2 ounces) diced pimientos, drained
- 2 tablespoons dry bread crumbs
- 1 tablespoon butter, melted
