My special needs girls group, Remi’s Bus loves making sugar cookies, it’s enough to do, so everyone gets to take part in the activity. Don’t forget bake goods are the sweetest gifts. My first recipe is super simple and everyone will want seconds and thirds I promise.
Rolled Sugar Cookies
4 eggs
2 cups of white sugar
1 1/2 cups of softened butter
5 cups of flour
2 teaspoon of baking powder
1 teaspoon of vanilla extract
1 teaspoon of salt
Directions
- Use a large mixing bowl to combine all ingredients. You want to mix the sugar and butter together until both are smooth. Then beat in vanilla extract and eggs.
- Next combine salt, baking powder, and flour then stir until completely mixed. Cover dough in mixing bowl with lid or saran wrap and in refrigerate for at least 1 hour or overnight.
- Preheat your oven to 400 degrees. Get your dough out of the fridge. Flour your surface were you’re going to roll your dough. Make sure you put enough flour down to create a good surface for rolling. When rolling your dough I like to have a 1/2 inch thickness but 1/4 to 1/2 is most desirable. This seems to work well with different types of cookie cutters.
- Now let the fun begin! Cut into shapes with your favorite cookie cutter’s or go freehand.
- On an ungreased cookie sheets place cookies 1 inch apart.
- Bake 6 to 8 minutes in the oven. Let cool and decorate if desired.
